Meet the Champagne Producer: Michel Chauvet

Even among the top grower-Champagne houses, mechanical innovations have replaced many of the tasks formerly performed by hand. P.Lancelot-Royer is one of the last at which everything is still done by hand, from vineyard work to riddling and bottling. The house was founded in 1960 and since 1996 has been run by winemaker Michel Chauvet. The house style of P.Lancelot-Royer Champagne is a light, fruity composition of flavours and aromas.

Come and join us for dinner on Tuesday 15th March and meet traditionalist winemaker Michel Chauvet for yourself, where he will be pouring his creations at Bubbledogs for the evening.

We are super excited to introduce our guest dog this month, Oaxen Dog is finally here, from the two Michelin starred chef Magnus Ek from Oaxen Krog & Slip in Stockholm. Stockholm has quietly emerged as a gastronomic destination over recent years and for the month of March we have tapped into those Nordic vibes.

The Oaxen Dog can be enjoyed with a dog of your choice (pork, beef, vegetarian), buttered apples, spicy mustard, crispy kale and herb and nut butter – available for the month of March only for just £7.50.

Over the Valentines’ weekend James and Sandia were busy stateside, collaborating with renowned head chef Daniel Burns for a two day guest residency, at Michelin star restaurant Luksus in Brooklyn, NYC. ​ James and Daniel created a collaborative small eats tasting menu complemented with a unique matching beer selection. Highlights from the menu included; sea bass, onion and nettle, lamb breast, salted plum and rutabaga and carrot, bay leaf and liquorice. ​

Over at Tørst Sandia got to showcase one of her favorite Bubbledogs creations, the Small Eye hot dog – pickles, sriarcha, peanuts, cilantro with sausages sourced from The Brooklyn Hot Dog Company.
